SANDESH (Bengali Sweets)

The following ingredients are needed to make this delicious Bengali famous sweet recipe.

  • 500ml of milk
  • 2 tablespoons of lime juice
  • half cup of powdered sugar
  • 1 spoon of cardamom powder
  • few chopped almonds, cashews, and pistachios for garnishing

All we need to do at first is make cheena from the milk. By boiling the milk and adding 2 tablespoons of lime juice to it. When the cheena is made we need to separate the cheena from the water. For this, we need to take a cheesecloth and put the chenna in it tie the cloth, and hang it at height for about 30 minutes, so that the cheena and the water get totally separated. Now take the cheena in a dish and knead it nicely with your hands for 15 minutes till the cheena becomes soft. Now we need to add the powdered sugar to it and mix it nicely. After that, we need to heat a pan and put the mixture in it. And stir nicely for about 10 minutes, till the mixture will become thick and sticks out from the pan. Now transfer the mixture to a plate and let it cool. Add the cardamom powder to it and mix nicely. Next, we have to make small balls from the mixture. We need to roll these balls between our hand and then press it. Our sandesh is ready. Now we can decorate this Bengali sweet with almonds cashews and pistachios.

  • 1 cup of gram flour
  • 1 teaspoon baking soda
  • 1 teaspoon of yellow food color
  • 1 teaspoon of orange food color
  • half cup of sugar
  • oil for deep frying

All we need to do is first strain the gram flour so that no thick particles are there in the mixture. Next, we need to mix the gram flour with the baking soda and water. Make a thick batter of the gram flour. Now put a little batter in another bowl. Mix the orange color in it and mix nicely. Now take the yellow color and mix it with the batter. Now in the bowl consisting of more of the batter add the yellow color and mix them properly. Now heat oil in a pot for deep frying. The oil should be medium hot. Now we need to hold a ladle just on top of the oil pot. Now put the thick batter of the gram flour in the ladle and spread in a circular motion. The small balls of the boondi fall in the oil pot. Let the boondi fry nicely and put them out. Repeat this process. Now make a sugar syrup. And add the cardamom powder to it. Put the fried boondi in the sugar syrup. And let the boondi coat with the sugar syrup. Now mix the yellow color boondi and the orange boondi together. Our delicious Bengali sweet dish is ready to serve.

  • 3 cups of milk
  • 1 cup of  jaggery powder
  • 1 teaspoon of cardamom powder

All we need to do is boil milk in a pot and stir it continuously till the milk thickens. Now let the milk cook down. Now add the jaggery to the milk. We must remember that while adding the jaggery the milk must be warm. Mix the jaggery in the milk very nicely. Now add the cardamom powder to the milk. Let the jaggery and the cardamom powder dissolve in the milk very nicely. Now take an earthen pot in which doi are made. Put the milk in the earthen pot. Now put the curd-making powder in the pot and mix it. Cover the top of the pot with foil paper and keep the pot in a warm place. The curd needs to be set down to misti doi. It takes minimum of 24 hours for the misti doi to set down. When the doi is set refrigerate it and then serve it.

  • 1 cup of gobindo vog rice

  • 1 liter S of milk

  • 1 cup of paneer grated
  • 2 cups of milk
  • half cup of sugar

  • half cup of Gobind vog rice
  • 5 cups of milk
  • half cup jaggery or Nolen Gur
  • 1 bay leaf
  • 1 teaspoon of cardamom powder
  • 1 tablespoon of cashews chopped
  • 1 tablespoon of almonds chopped
  • 1 tablespoon of raisins

All we need to do at first is soak the rice in water for about 20 minutes. Now heat a pot and put the milk in it. Stir the milk at regular intervals. Let the milk boil and become a little thick. After 10 minutes rinse the water of the rice and put the rice in the milk pot. Next add the bay leaf, and the cardamom powder and stir continuously and let them mix well. Let them simmer on low flame so that the rice gets cooked. We need to stir at regular intervals so that the rice does not get burnt at the bottom.   • 1 cup of flour
  • 1 teaspoon of cardamom powder
  • 1 teaspoon fenugreek seeds

  • 4 tablespoons of khoya
  • half cup of sugar and a half cup of water for making the sugar syrup

All we need to do at first is take a bowl and the milk in it. Next, add the khoya in it and mix them very well. Next, we need to add the cardamom powder and the fenugreek seeds in it and mix them properly. We have to keep in mind that the batter made out of the ingredients mentioned above must not be too thick or too watery, it must be of medium consistency. Now we need to beat the batter with a fork for 5 minutes so that the malpua is fluffy. Now set this batter aside for about 4 to 5 hours. After 5 hours again beat the batter for 5 minutes. Next, We need to heat a pan and add ghee to it. When the ghee is hot we need to add 2 tablespoons of batter to it and then let them fry till golden brown on both sides. In the meantime, we need to make the sugar syrup. For making sugar syrup heat a pot and put the sugar and water in it. let the sugar melt and the water boil. Our sugar syrup is ready. Next when the malpua becomes golden brown, put the malpua direct into the sugar syrup from the pan. Let the malpua soak in sugar syrup for about 2 minutes. Our malpua is ready. We can serve this yummy Bengali sweet dish with rabdi also.

For making the syrup we need to add water, sugar, and cardamom powder to a pot. Put the pot in flame and let the sugar boil and dissolve. Our sugar syrup is ready. Add the rose water to the syrup. Now kneed the cheena very smoothly for about 5 to 10 minutes. When the mixture turns smooth take small portions of it and make small balls. Now again heat the sugar syrup and put the small balls in it one by one. Let them boil for 5 minutes. Our rosogolla is ready to serve
