Ingredients
  

  • 1 cup flour
  • 1 teaspoon salt
  • 1 cup ghee

STUFFING

  • half cup sattu
  • 1 teaspoon salt
  • 2 tablespoon mustard oil
  • 4 tablespoon onions chopped
  • 1 teaspoon kalonji seeds
  • 1 teaspoon ajwain
  • 1 tablespoon pickle

ALLO CHOKHA

  • 1 cup mashed boiled potatoes
  • 2 tablespoon coriander leaves
  • 1 teaspoon green chili chopped
  • 1 teaspoon salt
  • 2 tablespoon mustard oil

TOMATO AND BRINJAL CHOKHA

  • half cup tomatoes
  • 1 piece small brinjal
  • 1 teaspoon green chili
  • 2 tqblespoon coriander leaves
  • 2 tablespoon mustard seeds
  • 1 tablespoon lemon juice
  • 1 teaspoon ginger chopped

Instructions
 

  • At first, make a tight dough with the atta and water.
  • Keep them aside.
  • Now to make the filling add the sattu and all the other ingredients to a pan and mix them very well.
  • Now make small round balls from the atta dough and put the filling of the sattu inside the balls.
  • keep them aside.
  • Now make the allo chokha by adding all the ingredints to the smashed potatoes and mix them very well.
  • Next, make the tomato and brinjal chokha by chargrill the tomatoes and brinjal.
  • Remove the skins of the tomato and brinjal and smash them to a bowl.
  • Add all the other ingredients and mix them very well.
  • Now bake the atta balls on open fire till they gets cooked well.
  • Dip the balls in ghee and then serve them hot with the aloo chokha and brinjal chokha.

Ingredients
  

  • half cup chana dal soaked in water
  • 1 cup rice soaked in water
  • 1 tablespoon garlic chopped
  • 1 teaspoon cumin seeds
  • 1 teaspoon green chili chopped
  • half teaspoon turmeric powder
  • half teaspoon asafoetida
  • oil for deep fry

FOR THE CHUTNEY

  • 2 medium sized tomatoes
  • 1 teaspoon salt
  • half teaspoon panch phoron
  • 1 dried red chili
  • few curry leaves
  • 1 teaspoon garlic chopped
  • half cup onions chopped
  • half teaspoon asafoetida
  • 1 tablespoon oil
  • 2 tablespoon jaggery powder

Instructions
 

  • Add the soaked chana dal and rice to a grinder.
  • Add the garlic, green chili, and cumin seeds with them to the grinder.
  • Grind the whole to a smooth paste
  • Now add salt, asafoetida, and turmeric powder to the paste.
  • Mix them very well.
  • Now heat oil in a pan
  • Now use a small ladle to prepare Dhuska
  • Next, pour a half ladle of the batter into the oil.
  • Cook each of them till they become golden brown.

CHUTNEY

  • Heat oil in a pan and add the asafoetida and the dried red chili.
  • Next, add the curry leaves, panch phoron, and garlic.
  • Let them crackle.
  • Now add the onions and saute them till the color turns golden brown.
  • Now add the tomatoes and all the other spices left.
  • Cover the lid and cook till the tomatoes get soften
  • Now add the jaggery powder and cook them more for 5 minutes on low flame
  • Adjust the water consistency and our chutney is ready to be served with the delicious Dhuska Vada

Notes

  • Soak the dal and the rice overnight so they become more smooth.

  • 1 cup wheat flour
  • half cup desiccated coconut
  • half teaspoon fennel seeds
  • half teaspoon cardamom powder

JAGGERY SYRUP

  • half cup jaggery powder
  • 1 tablespoon ghee

JAGGERY SYRUP

  • Add 2 cups of water to a pan on medium flame.
  • When the water gets warm add the jaggery powder to it.
  • Stir them and mix them well.
  • Now add the ghee to it and stir them till the consistency becomes sticky like syrup.

THEKUA

  • Add the wheat flour, coconut, fennel seeds, and cardamom powder to a bowl.
  • Mix them together very well.
  • Now add the jaggery syrup to the flour.
  • Now mix them together with your fingertips.
  • Add the jaggery syrup in parts and mix them nicely until the flour turns into a smooth and stiff dough.
  • Now cut small size balls from the dough and flatten them with your palm.
  • Next, place this flattened dough in a Thekua mould and give them the shape of a Thekua.
  • Place the all dough balls like this and give them the shape of Thekua.
  • Now heat oil in a pan and deep fry them till the color turns golden brown
