- 2 cups carrot grated
- 4 cups milk
- half cup sugar
- 1 cup khoya

- 1 teaspoon cardamom powder

- 1 tablespoon raisins

- Heat a pan and add 2 tablespoons of ghee to it.
- Now add the grated carrots and stir them very nicely till the moisture goes out and a sweet aroma comes out.
- Now heat another pot and add the milk to it.
- Let the milk boil and stir them continuously till the milk becomes half
- Now add the carrots and stir them.
- Cover the lid and let the carrots get cooked.
- After 10 minutes open the lid and add the khoya and sugar.

Ingredients
- 2 cups flour
- 1 teaspoon cardamom powder

- 2 cups milk
- 4 tablespoon ghee

- Take a bowl and all the milk and khoya to it.
- Mix them very nicely.
- Now add flour, fennel seds, and cardamom powder to it.
- Mix them very well and make a smooth batter out of it.
- Beat the batter for about 10 minutes.
- Now set the batter aside for about 2 hours.
- Now prepare the sugar syrup by adding the sugar and water to a pan.
- Heat them till the sugar melts and turns sticky.
- Set them aside.
- Now heat a pan and add ghee to it.
- When the ghee becomes hot, add 2 tablespoons of the batter to it.
- The batter spreads according to its consistency.
- Fry them well till the color turns golden brown.

Notes
- To avoid crystallization of the sugar syrup you can add lemon juice to it.
- Allow the malpuas to set in the sugar syrup for 10 minutes directly from the frying pan.
- You can adjust the consistency of the batter by adding more milk to it latter.
- Serve the malpuas by garnishing them with chopped nuts.
