AAM PANNA
Ingredients
- 2 medium-sized unripe mangoes
- 2 cups water
- 1 cup sugar
- 1 teaspoon roasted cumin powder
- 1 teaspoon black pepper powder q
- 1 teaspoon black salt
- few mint leaves
- few cubes ice
Instructions
- Wash the mangoes in water nicely.
- Add the mangoes in the pressure cooker and add some water to it.
- Cook them for 2 whistles on low flame.
- Now peel the mangoes and separate them from the pulp.
- Smash the pulp and strain them nicely to a bowl.
- Add the water and mix them nicely.
- Add sugar, roasted cumin powder, black salt, and black pepper powder
- Stir them nicely.
- Pour them into a glass.
- Add the ice and mint leaves.

MANGO RASAM
Mango Rasam is a sweet tangy recipe of raw mango. This recipe is served hot with rice and curry. You can eat them as soup also. This is a south Indian recipe.

MANGO RASAM
Ingredients
- 1 raw mango
- 2 tablespoon Arhar dal
- 1 tablespoon ghee
- half teaspoon mustard seeds
- 1 teaspoon cumin seeds
- few curry leaves
- 1 teaspoon green chili chopped
- half teaspoon asafoetida
- 1 teaspoon ginger chopped
- half cup tomatoes chopped
- 1 teaspoon Cumin powder
- 1 teaspoon black pepper powder
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1 teaspoon salt
- 1 tablespoon lemon juice
- 1 tablespoon jaggery powder
- 2 tablespoon coriander leaves
Instructions
- pressure cook the mangoes with half cup of water to 5 whistles.
- when the mangoes gets soften peel them and take the pulp out of them.
- Now put the pulp in a mixture grinder and add half cup of water to it.
- Grind them to a smooth puree.
- Next, cook the dal in a pressure cooker for 5 whistles.
- Smash the dal very nicely.
- Next heat a pan and add ghee to it.
- Add the mustard seeds, green chilies, curry leaves, asafoetida, and ginger.
- Let them crackle for 1 minutes in low flame.
- Now add the mango puree, tomato, jaggery, salt, turmeric powder, and all the other spices left.
- Mix them very well and add 2 cups of water to it.
- Cook the mixture for 10 minutes on low flame.
- Now add the chopped coriander leaves on the top and serve them hot.

MANGO PACHADI
Mango Pachadi is a South Indian recipe. This dish is similar to raita. This recipe contains flavours of mango and is made with yogurt, coconut, and chilies. You can serve this recipe as a side dish with rice and paratha.

- 2 raw mangoes
- 1 tablespoon green chilies
- 2 tablespoon jaggery powder
- 1 teaspoon salt
- 1 tablespoon oil
- 1 dry red chili
- 1 teaspoon mustard seeds
Instructions
- Slice the raw mangoes and peel them nicely
- Add them to pot with water.
- Add the green chilies.
- Simmer them on low flame and let them cook very well.
- Add the jaggery powder to it, when the mixture gets a little thickens.
- Now heat oil in another pan.
- Add the dry red chili and mustard seeds.
- Toss them nicely and add them to the pot .
- Mix them nicely.

RAW MANGO CHUTNEY

Ingredients
- 1 cup raw mangoes slices
- 1 tablespoon oil
- 1 teaspoon fenugreek seeds
- 1 teaspoon cumin seeds
- 1 teaspoon fennel seeds
- 1 teaspoon asafoetida
- 1 teaspoon salt
- 1 teaspoon turmeric powder
- half cup jaggery powder
- 1 teaspoon red chili powder
- 1 teapoon ginger powder
Instructions
- Add oil to a pan and add the fenugreek seeds, cumin seeds, fennel seeds, and asafoetida.
- Let them crackle for 30 seconds on low flame.
- Now add the mango and mix them very well.
- Add salt and turmeric powder.
- Add 1 cup of water and cover the lid and let them cook till the mangoes becomes soft.
- Now add the jaggery powder and red chili powder.
- Mix them very well.
- Check the consistency.
- If required add a little water and mix them very well.
